SPRINGTIME TAPAS: The word ?tapas? is derived from the Spanish verb tapar, ?to cover?. Long ago, a small, thin slice of bread or meat was used as a ?cover? so that fruit flies would not get into their glass of wine. Legend states: a ?server? walking past, plunked an olive on top of the ?cover? and the first ?tapa? was created.
